Poitin Ban Barrelled - Ban Poitin Barrelled and Buried this special edition of Ban Poitin was produced at the Echlinville distillery in County Down from potatoes malted barley and sugar beet. It was then barrelled in ex peated whisky casks and buried underground which has added extra spicy flavours to the malty spirit.

Lemon Juice - Juice of the lemon is about 5 to 6 percent citric acid with a pH of around 2.2 giving it a sour taste.

Beer Brew Lambic - Lambic beer is brewed in the Pajottenland region and include gueuze kriek lambic and framboiseand is fermented through exposure to wild yeasts and bacteria native to the Zenne valley.

Fairy Wind is succulent mild cocktail at 1.6 standard drinks. Built with 30ml poitin ban barrelled and 10ml lemon juice with 250ml beer brew lambic and best at tea time. Just add poitin to glass then add lemon juice and top with beer and served in a highball glass cold.
