Method - Poured - Cold

Cut long spiral of lemon peel.
Hold peel in long glass.
Add the small amount of ice.
Pour in the gin.
Top glass with soda water.

Lemon Peel - Lemon peel is the skin of a lemon and full of lemon oils and are used in cocktail for taste and garnish and can be shaped in may styles.

Remsen Classic is rejuvenating full bodied cocktail at 2.8 standard drinks. Built with 90ml gin dry song cai and 150ml syphon seltzer with 50ml ice and served for or with tiffins. Just cut long spiral of lemon peel then hold peel in long glass and add the small amount of ice. Pour in the gin and top glass with soda water and served in a highball glass cold.
