Method - Shaken - Cold

Add ice to shaker.
Add all ingredients to shaker.
Shake well until foamy and fluffy.
Strain into glass.

Gin Mountain - Mountain Gin is made with locally foraged pine needles and native pepperberry from the Mt Macedon region combined with fresh orange zest lemon myrtle juniper and coriander.

Lemon Juice - Juice of the lemon is about 5 to 6 percent citric acid with a pH of around 2.2 giving it a sour taste.

Chai Syrup - Chai Syrup made with water and sugar.

Bitters Plum - Bitters Plum with richly flavoured fruity bitters with plum flavours.

Egg White - White of a egg also called albumen or the glair glaire used to make your cocktail fluffy you can also use Aquafaba.

Ice - Ice is water frozen into a solid state and can come in wet ice cubes and dry ice cubes and is used to chill cold and lightly delute cocktails to make them smoother.

Macaques is luscious robust cocktail at 2.2 standard drinks. Shaken with 60ml gin mountain and 15ml lemon juice with 10ml chai syrup as well as 10ml bitters plum including 15ml egg white also 100ml ice and best with morning tea snacks. Just add ice to shaker then add all ingredients to shaker and shake well until foamy and fluffy. Strain into glass and served in a saucer glass cold.
