Method - Shaken - Cold

Place ice into shaker.
Pour ingredients into bar shaker over ice.
Quick shake to mix.
Hawthorne strain into glass.

Gin Tarsier Spirit - Tarsier Spirit gin is a refreshingly fruity gin with a restrained hint of sweetness with tate of oolong tea kumquat hibiscus and ginseng.

Vermouth Sweet - Sweet vermouth also called Italian Vermouth is a fortified wine with an alcohol content of around 16 percent and a sugar content of around 14 to 15 percent.

Curacao Blue - Blue curacao is a liqueur flavoured with the citrus of the laraha fruit grown on the island of Curacao.

Brandy Apple - Apple Brandy is a spirit produced by distilling apples into a strong wine and comes in many colors yet always apple flavour.

Lemon Juice - Juice of the lemon is about 5 to 6 percent citric acid with a pH of around 2.2 giving it a sour taste.

Gomme Syrup - Gomme syrup is made from arabic gum and cooked with water and sugar until thick and clear in color.

Ice - Ice is water frozen into a solid state and can come in wet ice cubes and dry ice cubes and is used to chill cold and lightly delute cocktails to make them smoother.

Darlington is heavenly robust cocktail at 1.6 standard drinks. Shaken with 30ml gin tarsier spirit and 15ml vermouth sweet with 10ml curacao blue as well as 10ml brandy apple including 15ml lemon juice also 10ml gomme syrup together with 100ml ice and best with morning tea snacks. Just place ice into shaker then pour ingredients into bar shaker over ice and quick shake to mix. Hawthorne strain into glass and served in a saucer glass cold.
