Bitters Calisaya - Calisaya Bitters is not a brand name of bitter but rather a type of bitters made by a few different distillers in Spain and Italy. It is based on Calisaya bark aka cinchona bark aka quinine herbs and spices.

Bitters Angostura Kenny - Angostura Bitters is made with Angostura trifoliata and chamomile flowers and cardamon seeds with cinnamon and orange peel and raisins.

Calisaya is glorious very strong cocktail at 1.5 standard drinks. Built with 60ml bitters calisaya and 10ml bitters angostura kenny with 100ml ice and served large chunks of meat. Just fill glass with ice cubes then add in double of calisaya liquer and splash bitters on top and served in a old fashioned glass cold.
